This cream cheese stuffed chicken breast recipe is one of my all-time favorites! Not only is it absolutely delicious but it’s also low-carb and Weight Watcher friendly.

We eat a lot of chicken in my home, like a lot! I’m currently following the Weight Watcher program, so finding low-point dinner ideas that the whole family will enjoy is very important to me. I’m not a big fan of cooking one dinner for me and one for the family. 

Thankfully, this cheese stuffed chicken dish is one that everyone will enjoy. Even my picky toddler seems to enjoy it – that’s a huge win!

I try to keep the stuffing pretty simple as I don’t want to use a ton of my WW points but you can really get creative with the stuffing ideas. 

To make this recipe, you’ll want to have the following ingredients. 

  • Boneless, skinless chicken breasts
  • Fat-free cream cheese (full fat is fine as well)
  • Italian Seasoning
  • Garlic Powder
  • Panko Breadcrumbs
  • Italian Breadcrumbs

Get your oven pre-heated to 375 degrees. You’ll also want to prep your baking dish with some non-stick spray. 

In a small bowl, combine cream cheese, Italian seasoning and garlic powder. 

Butterfly the chicken by slicing down the center of the chicken breast. Make sure not to cut all the way through the chicken breast.

Stuff each chicken breast with the cream cheese mixture.

Place the stuffed breasts in the prepared baking dish. Spray the top of each chicken breast with nonstick cooking spray and sprinkle a pinch of garlic powder over each breast.

Combine the panko and Italian breadcrumbs and top each breast with one tablespoon of the breadcrumb mixture. Spray another coat of nonstick cooking spray over the top of the breadcrumbs.

Bake in the preheated oven for 30 to 35 minutes, until the chicken breasts are cooked through.

Once you have your chicken breasts stuffed, I like to flash freeze mine for about 10 minutes. This ensure that the stuffing hardens up a bit and is less likely to melt out. 

How do you know when a stuffed chicken breast is fully cooked?

You’ll want to ensure your chicken breast reaches an internal temperature of 165 degrees. You can use an instant read thermometer.

Instructions

Preheat oven to 375 degrees and grease a baking dish with nonstick cooking spray.

In a small bowl, combine the cream cheese, Italian seasoning and garlic. Stir to mix.

Spread half the cream cheese mixture on the inside of each chicken breast. Fold the top of the breast over to cover the cream cheese.

Place the stuffed breasts in the prepared baking dish. Spray the top of each chicken breast with nonstick cooking spray and sprinkle a pinch of garlic powder over each breast.

Combine the panko and Italian breadcrumbs and top each breast with one tablespoon of the breadcrumb mixture. Spray another coat of nonstick cooking spray over the top of the breadcrumbs.

Bake in the preheated oven for 30 to 35 minutes, until the chicken breasts are cooked through.
