Ingredients

  • 2 pounds pork loin
  • 1 ½ pounds baby new potatoes
  • 1 pound baby carrots
  • 1 large red onion
  • 4 garlic cloves, minced
  • 1 cup MUSSELMAN’S® Apple Butter
  • cup Dijon mustard
  • cup soy sauce
  • 1 cup beef broth
  • salt and pepper

Directions

  1. Step 1
    Place a large nonstick skillet over medium-high heat. Once hot, season the pork loin with salt and pepper and lay it in the skillet. Sear the pork loin on all sides to seal in the juices, about 8-10 minutes. (If using a regular skillet, add 1 tablespoon oil).

  2. Step 2
    Peel the red onion and cut into large chunks. Cover the bottom of a large 6-quart slow cooker with half of the onions, potatoes, and carrots. Lay the seared pork loin over the top and surround it with the remaining vegetables.

  3. Step 3
    In a small bowl, whisk the minced garlic, apple butter, dijon mustard, soy sauce and broth together. Pour the mixture over the pork and vegetables.

  4. Step 4
    Cover the crock pot and turn on low for 8-10 hours, or high for 4-6 hours. 

  5. Step 5
    When potatoes are tender, it is ready. Cut the tenderloin into thin slices and place on a platter, surrounded by the vegetables.

    Taste gravy, and season with salt and pepper to taste. Pour gravy over pork and serve.

When your day doesn’t go quite as planned it is nice to have control over something. Just knowing that this Simple Crockpot Pork Tenderloin & Vegetables take only minutes to throw together and need no special attention is a miracle on a busy day.

I honestly had no intentions of sharing this recipe. This morning I was so frazzled that it was almost noon by the time I threw this in the crockpot. I had done similar roasts before but this was a little bit of this and a little bit of that so we would have dinner tonight. I decided to share what I was doing on my Instagram Story. It turned out SO WELL I knew I had to post it for all of you.

I diced some potatoes, carrots, celery, and onions and tossed them with some olive oil and threw them right in my crockpot. I used the biggest crockpot I have (6 qt) for this one because I knew my pork tenderloin was large. You can use a smaller one, or even use fewer veggies if you have a smaller family.

I placed the pork tenderloin right on top of the veggies. I drizzled it with a little olive oil and sprinkled it with salt, pepper, oregano, and garlic. Cover and cook on high for 4-6 hours depending on the size of the tenderloin mine was large so I went for the 6 hours. Use a meat thermometer to double check the internal temperature of your roast to ensure it is cooked thoroughly.  You can also cook on low for 8-10 hours. This is great if you have to be out of the house all day.

Now I put the roast on top of the veggies for a couple reasons. The vegetables soften with the juices from the pork and get a ton of flavor. I wanted to slice my pork roast into chop like portions. By cooking it like this it didn’t fall apart as easily but was still super tender. This allowed me to slice it without any problems. 

I did such a large Crockpot Pork Tenderloin that I only cut half of it up for dinner tonight. I saved the other half and put it in the fridge to slice up and serve with bbq sauce for sandwiches another night this week. I love a two for one!

Tonight we did the Crockpot Pork Tenderloin sliced into chops with the roasted vegetables and a side salad.

It turned out moist, and full of flavor. Not a peep was heard throughout dinner and everyone enjoyed! That is a winner in my book!

  • 1 Boneless Pork Tenderloin 3 – 4 lbs
  • 2 tablespoons Olive Oil
  • 3 cups diced potatoes
  • 1 cup diced carrots
  • 1 cup diced celery
  • 1 cup diced onion
  • 1 tablespoons minced garlic
  • 1/2 tsp dried oregano
  • salt and pepper

  • Toss potatoes, carrots, celery, and onion in a bowl with 1 – 2 tbsp of olive oil and a little salt and pepper. Stir to coat. Dump into a large crockpot.

  • Place Pork tenderloin on top of vegetables. Drizzle with another 1 -2 tbsp of olive oil top with garlic, oregano, salt, and pepper. 

  • Cover and cook on high for 5-6 hours depending on the size of roast or low for 8 -10 hours.

  • Use a meat thermometer to ensure the pork tenderloin is done before serving. Serve with veggies and a side salad.

How long does it take to cook a pork roast with potatoes and carrots?

Put the pork on a rack in a roasting pan and place in the oven. Reduce heat to 325 degrees, and roast meat for about 45 minutes. Toss the potatoes and carrots with the olive oil, sprinkle with salt, and place in the pan around the pork. Roast another 75 minutes, or until a meat thermometer reads 160 degrees.

Should I sear pork tenderloin before slow cooking?

The first step is to season your meat and give it a good sear before placing it in the crock pot. If you're short on time and don't want to brown your pork first, you can place directly in the slow cooker and skip this step. I think it's really worth the extra effort though because it adds so much more flavor.

How do you cook pork tenderloin without drying it out?

Brush the pork tenderloin with additional marinade, then bake in a preheated oven at 425°F for about 15-20 minutes, until the pork reaches a temperature of 145°F, then remove it from the oven. Cooking the pork tenderloin at the high temperature of 425 degrees F helps it cook quickly and prevents it from drying out.

What is the difference between pork loin and pork tenderloin?

The names may be almost the same, but pork loin and pork tenderloin are different cuts of meat. A pork tenderloin is a long, narrow, boneless cut of meat that comes from the muscle that runs along the backbone. A pork loin is wider and flatter, and can be a boneless or bone-in cut of meat.
