I love me a skillet meal. Sorry Mom for the horrible grammar, but it’s true.

Skillet meals are the jam to my biscuits.

For one, the entire meal is prepared in one skillet. This means there’s less cleanup after the meal.

Secondly, skillet meals are typically fast.  And that’s exactly the mode I’m in around dinner time.

The third characteristic I’m looking for is minimal ingredients.  My eyes start to gloss over if there’s more than 5 ingredients.  It’s like my brain can’t process any more.  My hard drive is full.

Pork and Bean Casserole fits all of these criteria.

Sloppy Joes with Beans

My husband walked into the kitchen when I was making this yummy hamburger bean casserole, and he said it looks and smells like a Sloppy Joe recipe with beans.

Ding, ding, ding. We have a winner.

That’s exactly what this hamburger bean skillet reminds me of.  The slightly sweet sauce that smothers the hamburger and beans has a sloppy joe flavor. And then to top it off, it’s eaten as an open faced sandwhich over buttered bread.

Truth be told, this is how I eat my sloppy joes too.
