Blackstone is good at cooking many things…. conventional wisdom says ribs is not one of them.

Do you have anything to cover them with to steam and make tender? I just can’t see how they will cook evenly or end up anything but a chewy mess.

Yuck. That's what my smoker is for. Flattops are for quick searing...ribs need low and slow. File this under what not to do IMO.

Ribs are the only ones that can't be done even if you use an instant pot to "cook" them first. Only proper "wood" fire for them in my book and we experiment a lot at our seasonal camping site where open wood or charcoal fires are not allowed in Tahoe National Forest. We even do pizza on top of a flipped-over cast iron pan on the 22" Blackstone with a lid closed. We even baked bread!

that's a no from me dawg. Ribs need to be smoked, or at least slow cooked, for 4 hours minimum, or 5-6 if they're a larger rack. Cooking ribs hot and fast will result in a whole lot of tough meat, as is typical with pork.

At first I thought this was sarcastic because of everyone showing what they do on there stones.....and then I read the op comment. My daddy told me to always use the right tool for the right job.......and this......is not the right too. Will it get it done? Maybe? Will it be phenomenal? Not if you are only cooking it to 140. May even be a little less than mediocre. Can he save them by cutting the ribs individually, put the burners on low and cook them like the world's strangest lamb chops?
