How to roast squash in the oven

Prepare the Squash
• Preheat the oven to 400F and line a baking sheet with
   aluminum foil.
• Cut the butternut squash in half lengthwise and pierce all over
   with a fork.

Roast the Squash
• Place the squash halves on the baking sheet, skin-side down,
   and brush the flesh with olive oil. Season with salt and pepper
   to taste.
• Roast until fork-tender and browned on the edges, about 40-45
   minutes.

Bring it All Together
• Remove from baking sheet and let cool.
• Serve the roasted squash in the skin or scoop it out and mash it!

If you’re anything like me, you’ve already made a few batches of butternut squash soup by the time mid-October rolls around. But while butternut squash soup is hands down one of my favorite fall foods, my love for butternut doesn’t end there. When I’m not making soup, I like to simply roast butternut squash. Golden brown, caramelized, and seasoned with salt and pepper, it has a delectable sweet and salty taste and buttery texture. If you’ve never roasted butternut squash before, you have to try it this fall!

Today, I’m sharing my go-to roasted butternut squash recipe. It’s super easy – it requires 4 ingredients (squash, salt, pepper, and olive oil) and 10 minutes of active prep – but it’s delicious nonetheless. It’s good enough to enjoy on its own as a side dish, but it also amps up the fall flavor in all sorts of recipes – bowls, salads, soups, and more! Let’s cook.

    Whether I gather my summer squash from my own garden bounty or from my local farm stand, I love to make many different recipes with it. Many nights when we grill out, I place this along with other vegetables on kebabs. And I love to make my Squash Casserole for big family meals too. But one of my favorite quick, simple, easy as pie ways to cook squash is to oven roast it. It’s ready in just a few minutes, doesn’t require a whole lot of effort and it always turns out delicious.

    How to Cook Oven Roasted Squash


    Buttery, flavorful, and out of this world – all words I use to describe this recipe.

    Here’s how I make it.

    Ingredients

    • squash – about 2 pounds of fresh squash
    • olive oil – enhances the flavor of the squash
    • black pepper
    • salt

    Instructions

    1. Preheat. Preheat oven to 400 degrees Fahrenheit.
    2. Prepare. Clean the squash well. Slice the squash lengthwise in a uniform thickness of about ¼ inch. Place the squash slices on a baking sheet and drizzle with olive oil. Sprinkle with salt and pepper.
    3. Cook. Place in oven and bake for about 15 minutes or until tender.
    4. Serve. Once squash is done, remove from oven and serve warm.

    It makes the perfect side dish for just about anything you’re serving for supper in the summer or anytime. Pair it with Baked Chicken Breast or a skillet steak or alongside a hearty salad. I think this squash goes with just about anything!

    • Clean squash and then slice lengthwise to uniform thickness, about ¼ of an inch. Place on kitchen sheet pan and drizzle with olive oil. Sprinkle with salt and black pepper. Place in oven and cook until tender, about 15 minutes.

      Do you need to peel squash before roasting?

      You don't have to peel the squash but it's recommended. It mostly depends on how you'll be consuming it. If you're going to roast the whole squash, I don't find it necessary. The skin becomes easily digestible after roasting, and it's easy to scoop out if you don't want it.

      How long does it take for squash to be cooked?

      Preheat the oven to 350 degrees F (175 degrees C). Place squash, cut-sides down, in a 9x13-inch baking dish. Pour 2 cups water into the dish around the squash halves. Bake in the preheated oven until tender and easily pierced with a fork, about 1 1/2 hours, adding more water as needed.

      What is the cooking method for squash?

      It can be roasted, steamed, sautéed, grilled, baked, fried, or even air fried. Here are our four favorite easy methods of cooking yellow summer squash: Roasted (or Baked) – Cut in half, slice or cut into pieces. Brush with olive oil and season with salt.

      Do you roast squash cut side up or down?

      Tips and Tricks. Placing the squash cut side down on the baking sheet ensures that you aren't drying out the squash. When you roast squash open-faced for 45 minutes, it can dry out and the inside can form “strings” in the squash.
